Chilaquiles Recipe

Ingredients:

12 pieces of tortillas (corn)
1 cup of chopped onions
2 pieces of garlic cloves; crushed
or
1/4 teaspoon of garlic powder
2 teaspoons of powdered chili
1 teaspoon of cumin (ground)
1-1/2 cups of Cottage Cheese (low fat)
1-1/2 cups of tomatoes (crushed)
6 ounces of grated cheese (Jack or Cheddar)
Salt (to taste)
1 Tablespoon of oil

Instructions:

Cut the tortillas to wedges. Saute the onions with oil on a nonstick skillet for five mins. Add pieces of tortilla, chili, garlic, salt, and cumin; toss till tortilla become wilted. Combine tomatoes and cheese inside the blender; blend till smooth. Add onto the sauteed mixture; stir them well. Sprinkle grated Cheddar cheese. Place inside the oven and bake (350 degrees F) for 20 mins.
