Diabetic Kid’s Snackin’ Corn Recipe
Ingredients:
9 cups of popped corn
1/3 cup of peanut-butter
1 Tbsp of butter
Instructions:
Have popcorn popped slowly in air-type popper w/o using extra fat. Melt butter over low-heat together w/ peanut-butter ’til mixture is runny.
You drizzle the mixture over popcorn & mix thoroughly. Spread it in shallow bake-pans. Bake for about 10 mins at 375 degrees F, stir for 2-3 times. You will know its done when corn turns crispy and the topping sets.
